Ingredients
For the meatballs:
1 lb lean minced beef
3 tbsp cornflour
1 tbsp garlic granules
1 small or ½ large onion, grated
1 tsp dried oregano
1 tsp salt
1 tsp coarse ground black pepper
For the sauce:
1 tbsp olive oil
1 small onion, sliced
2 courgettes, sliced
1 tbsp garlic powder
2 tsp chilli powder
1 tsp cumin
½ tsp oregano
2 x 14 oz can chopped tomatoes in juice
1 tsp salt
Method
- Heat the olive oil in a frying pan and fry the onion over a medium heat
for about 3 minutes until softened.
- Meanwhile, mix all the meatball ingredients together in a bowl and form
into 1 inch balls. Squeeze each meatball tightly to ensure that it is
compact so that it doesn't break up during cooking.
- Add the rest of the sauce ingredients to the frying pan, stir and bring to
the boil.
- Add the meatballs and turn them gently in the sauce to ensure they are
covered.
- Cook for about another 10 minutes until the meatballs are cooked through.
- Serve with plain rice.
