Serves 4

Ingredients

For the meatballs:
1 lb lean minced beef
3 tbsp cornflour
1 tbsp garlic granules
1 small or ½ large onion, grated
1 tsp dried oregano
1 tsp salt
1 tsp coarse ground black pepper

For the sauce:
1 tbsp olive oil
1 small onion, sliced
2 courgettes, sliced
1 tbsp garlic powder
2 tsp chilli powder
1 tsp cumin
½ tsp oregano
2 x 14 oz can chopped tomatoes in juice
1 tsp salt

Method

  1. Heat the olive oil in a frying pan and fry the onion over a medium heat for about 3 minutes until softened.
  2. Meanwhile, mix all the meatball ingredients together in a bowl and form into 1 inch balls. Squeeze each meatball tightly to ensure that it is compact so that it doesn't break up during cooking.
  3. Add the rest of the sauce ingredients to the frying pan, stir and bring to the boil.
  4. Add the meatballs and turn them gently in the sauce to ensure they are covered.
  5. Cook for about another 10 minutes until the meatballs are cooked through.
  6. Serve with plain rice.
