Serves 4

Ingredients

1 lb lean minced beef
2 tbsp garlic granules
2 tbsp onion powder
1 tbsp cornflour
14 oz tin chopped tomatoes
1 tsp chilli powder
1 tsp ground cumin
1 tsp paprika
1 tsp ginger powder
1 tsp cayenne pepper
1 tbsp lime juice
1 tsp salt
1 tsp coarse ground black pepper
1 iceberg lettuce, shredded
2 fresh tomatoes, sliced
4 oz white cheddar, grated
8 flour tortillas

Method

  1. Fry the minced beef over a medium heat without oil for about 5 minutes until browned.
  2. Add the garlic, onion powder, cornflour, tinned tomatoes, chilli powder, cumin, paprika, ginger, cayenne pepper, lime juice, salt and pepper.
  3. Mix well and simmer for about 10 minutes, stirring occasionally, until thickened.
  4. Heat the tortillas in the microwave for 30 seconds then divide the beef mixture between them.
  5. Top each with 2 slices of tomato, a small handful of lettuce and ½ oz of the cheese.
  6. Roll up the tortillas with the mixture inside and fold up the ends to form burritos.
  7. Serve with spicy potato wedges and a dollop of guacamole.
