Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

1 lb sirloin steak, cut into thin strips
1 tbsp sunflower or vegetable oil
2 tbsp butter
1 small or ½ large onion, halved and sliced
1 tbsp plain flour
1 tsp tomato purée
1 tsp Dijon mustard
¼ pint soured cream
1 tbsp dried parsley
1 tsp coarse ground black pepper

Method

  1. Heat the oil in a in a very hot frying pan and stir-fry the beef for about 2 minutes, until browned, then set aside.
  2. Lower the heat to medium, add the butter and the onions and fry for about 5 minutes, until softened.
  3. Return the beef to the pan, then add the flour, tomato purée, mustard, soured cream, parsley and pepper, and stir until well mixed.
  4. Cook for about another 2 minutes until heated through.
  5. Serve with thin-cut American fries.
