Total cooking and preparation time approximately 20 minutes

Serves 4

Ingredients

4 burger buns
1 lb lean minced beef
1 tbsp olive oil
1 tsp salt
1 tsp coarse ground black pepper
4 slices unsmoked streaky bacon
4 cheese slices
a few pieces of iceberg lettuce, chopped
2 tsp ketchup

Method

  1. Preheat the grill to the highest setting.
  2. Cut the buns in half and lightly grill the inner sides for about 1-2 minutes until lightly toasted, then set aside.
  3. Divide the minced beef into four, roll each portion into a ball and press firmly with your hands so that it is compact and won't break up.
  4. Flatten each ball into a disk about ½ inch thick, brush lightly with olive oil, and season with salt and pepper.
  5. Grill for about 7-8 minutes on each side until well done.
  6. Meanwhile, fry the bacon in a pan with no oil for about 5 minutes each side, until crisp.
  7. Put ½ tsp ketchup on the toasted side of the top half of each bun and use it to affix a cheese slice.
  8. When the burgers are done, arrange a layer of iceberg lettuce on top of each bun bottom half and place one grilled burger on top of each, followed by a slice of bacon.
  9. Replace the top halves of the bun making sure that the cheese slice doesn't fall off.
  10. Serve with chunky chips.
