Total cooking and preparation time approximately 40 minutes

Serves 4

Ingredients

1 tbsp olive oil
2 large or 4 small onions, sliced
2 cloves garlic, crushed
1 lb lean minced beef
14 oz tin chopped tomatoes
1 tbsp tomato purée
2 tsp chilli powder
2 tsp ground cumin
1 tsp paprika
1 tbsp lime juice
14 oz tins red kidney beans, drained
1 tsp salt
1 tsp coarse ground black pepper
8 tbsp mature cheddar, grated

Method

  1. Heat the oil in a large frying pan and fry the beef, onion and garlic gently for about 5 minutes until the meat has browned and the onions have softened.
  2. Add the tomatoes, chilli powder, cumin, paprika,  kidney beans and lime juice, then cook for about another 20 minutes.
  3. Season with salt and pepper and serve with plain rice.
  4. Sprinkle a little grated cheddar over the top if desired.
