Ingredients
1 tbsp olive oil
2 large or 4 small onions, sliced
2 cloves garlic, crushed
1 lb lean minced beef
14 oz tin chopped tomatoes
1 tbsp tomato purée
2 tsp chilli powder
2 tsp ground cumin
1 tsp paprika
1 tbsp lime juice
14 oz tins red kidney beans, drained
1 tsp salt
1 tsp coarse ground black pepper
8 tbsp mature cheddar, grated
Method
- Heat the oil in a large frying pan and fry the beef, onion and garlic gently for
about 5 minutes until the meat has browned and the onions have softened.
- Add the tomatoes, chilli powder, cumin, paprika,
kidney beans and lime juice, then cook for about another 20 minutes.
- Season with salt and pepper and serve with plain rice.
- Sprinkle a little grated cheddar over the top if desired.
