Serves 4

Ingredients

2 lb lean minced beef
1 large or 2 small onions, sliced
1 tbsp garlic, crushed
2 granny smith apples, chopped
14 oz tin chopped tomatoes
2 fresh tomatoes, chopped
1 red pepper, chopped
1 tbsp chilli powder
½ cup raisins
1 tsp cinnamon
1 tsp cumin
1 tsp salt
1 tsp coarse ground black pepper
2 oz almond flakes

Method

  1. Put the minced beef, onion and garlic in a large frying pan on a medium heat and cook for about 5 minutes until the beef has browned and the onions have softened.
  2. Add the apples, tinned tomatoes, fresh tomatoes, red pepper, chilli, raisins, cinnamon, cumin, salt and pepper. Stir.
  3. Lower the heat and simmer uncovered for about 15 minutes.
  4. Add the almonds and cook for about another 2 minutes, stirring continuously.
  5. Serve on a bed of plain rice with flour tortillas and avocado slices.
