Ingredients
2 tbsp olive oil
1 lb good quality beef sausages
1 green pepper, chopped
14 oz tin chopped tomatoes
3 tbsp dry white wine
2 tsp dried basil
½ tsp salt
½ tsp coarse ground black pepper
Method
- Heat the oil in a frying pan an a medium-high heat and fry the sausages
for about 10 minutes, turning halfway through, until browned.
- Add the green pepper and fry for another 2 minutes.
- Add the tomatoes, wine, basil, salt and pepper and cook for about another
3 minutes.
- Serve with lemon and
herb couscous.
