Steak with Mushrooms and Balsamic

Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

2 x 8 oz sirloin or rump steak
2 tbsp butter
8 oz closed-cup mushrooms, halved
2 tsp cornflour
¼ pint beef stock
2 tsp dried rosemary
1 tsp balsamic vinegar

Method

  1. Preheat the grill to the highest setting and grill the steak for about 4 minutes each side or as you like it done.
  2. Meanwhile, heat the butter in a frying pan on a moderate heat and fry the mushrooms for about 5 minutes.
  3. Stir in the cornflour, then add the the stock, cornflour, rosemary and vinegar.
  4. Cook for another 2-3 minutes, stirring continuously, until the sauce has thickened.
  5. Serve with wilted spinach and mashed potatoes.
