Stir-Fried Beef in Oyster Sauce

Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

1 lb rump steak, cut into stir-fry strips
1 tbsp dark soy sauce
2 tsp sesame oil
1 tbsp dry sherry
1 tbsp cornflour
3 large or 4 small carrots
1 tsp garlic, crushed
3 large or 6 small spring onions
2 tbsp sunflower or vegetable oil
1 cup beansprouts
4 tbsp oyster sauce

Method

  1. Put the steak, soy sauce, sesame oil, sherry and cornflour in a bowl.
  2. Mix well and leave to marinate for at least 5 minutes.
  3. Meanwhile, chop the spring onions and slice the carrots thinly.
  4. Heat the oil in a vet hot wok and stir-fry the carrots and garlic for about 2 minutes.
  5. Add the steak and stir-fry for about another 3 minutes until browned.
  6. Lower the heat slightly. Add the spring onions, beansprouts, marinade and oyster sauce, and stir-fry for another 2 minutes.
  7. Serve on a bed of plain rice, with prawn crackers.
