Total cooking and preparation time approximately 5 minutes, plus 1½ hours refrigeration time

Serves 4

Ingredients

¼ pint fruity red wine
½ tsp ground cinnamon
½ tsp ground cloves
2 bay leaves
1½ cups brown sugar
1 tin prunes, drained
1 tin pears, drained
1 tin blackberries, drained
1 tin orange segments, drained

Method

  1. Put the wine, cinnamon, cloves, bay leaf and sugar in a saucepan and mix well.
  2. Bring to the boil and simmer for 5 minutes.
  3. Remove the bay leaves and discard, then pour into a large bowl and place in the refrigerator for about half and hour, until cooled.
  4. Add the fruit, put back in the refrigerator, and leave for about another hour, until cool.
  5. Serve with clotted cream icecream or crème fraiche.
