Ingredients
4 thick-cut cod fillets, defrosted or fresh
4 oz butter
1 small or ½ large onion, finely chopped
8 oz closed-cup mushrooms, sliced
1 tbsp paprika
4 tsp plain flour
½ pint soured cream
1 green pepper, finely chopped
½ tsp salt
½ tsp coarse ground black pepper
Method
- Preheat oven to 190oC / gas mark 5.
- Place the fish in an ovenproof dish skin side down.
- Heat the butter in a frying pan on medium. Add the onion, mushrooms and
paprika and fry for about 3 minutes, until the onion and mushrooms have
softened.
- Stir in the flour, soured cream, pepper, salt and pepper, then spoon the
mixture over the cod.
- Bake in the oven for about 25 minutes until the fish is opaque.
- Serve with green beans and baby new potatoes.
