Baked Cod with Mushroom Sauce

Total cooking and preparation time approximately 35 minutes

Serves 4

Ingredients

4 thick-cut cod fillets, defrosted or fresh
4 oz butter
1 small or ½ large onion, finely chopped
8 oz closed-cup mushrooms, sliced
1 tbsp paprika
4 tsp plain flour
½ pint soured cream
1 green pepper, finely chopped
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Preheat oven to 190oC / gas mark 5.
  2. Place the fish in an ovenproof dish skin side down.
  3. Heat the butter in a frying pan on medium. Add the onion, mushrooms and paprika and fry for about 3 minutes, until the onion and mushrooms have softened.
  4. Stir in the flour, soured cream, pepper, salt and pepper, then spoon the mixture over the cod.
  5. Bake in the oven for about 25 minutes until the fish is opaque.
  6. Serve with green beans and baby new potatoes.
