Ingredients
4 haddock fillets, defrosted or fresh
3 tbsp olive oil
2 fresh tomatoes, chopped and deseeded
1 tsp capers, halved
2 tsp garlic, crushed
1 tbsp dried basil
½ tsp salt
½ tsp coarse ground black pepper
¼ pint dry white wine
Method
- Preheat oven to 200oC / gas mark 6.
- Place the fish in an ovenproof dish skin side down and brush the tops with
oil.
- Mix the tomatoes, capers, garlic, basil, salt and pepper in a bowl then
spoon over the top of the fish.
- Pour the wine over the top then cook in the oven for about 15 minutes
until opaque.
- Serve with plain rice.
