Total cooking and preparation time approximately 20 minutes

Serves 2

Ingredients

4 haddock fillets, defrosted or fresh
3 tbsp olive oil
2 fresh tomatoes, chopped and deseeded
1 tsp capers, halved
2 tsp garlic, crushed
1 tbsp dried basil
½ tsp salt
½ tsp coarse ground black pepper
¼ pint dry white wine

Method

  1. Preheat oven to 200oC / gas mark 6.
  2. Place the fish in an ovenproof dish skin side down and brush the tops with oil.
  3. Mix the tomatoes, capers, garlic, basil, salt and pepper in a bowl then spoon over the top of the fish.
  4. Pour the wine over the top then cook in the oven for about 15 minutes until opaque.
  5. Serve with plain rice.
