Salmon with Olives, Beans and Tomatoes

Total cooking and preparation time approximately 45 minutes

Serves 2

Ingredients

8 baby new potatoes, halved
4 oz whole green beans, trimmed
10 cherry tomatoes, halves
2 large boneless salmon fillets
6 anchovy fillets, chopped
2 tbsp olive oil
1 tbsp lemon juice
2 tbsp dried basil
¼ tsp salt
¼ tsp coarse ground black pepper

Method

  1. Preheat the oven to 200oC / Gas mark 6.
  2. Cook the potatoes in slightly salted boiling water for about 10 minutes, until almost done.
  3. Add the beans to the saucepan and cook for about another 3 minutes.
  4. Drain the beans and potatoes, transfer to a bowl and toss together with the cherry tomatoes.
  5. Place the salmon at one end of a large baking tray and the vegetables at the other.
  6. Sprinkle the anchovies over the top of the vegetables.
  7. Mix the olive oil, lemon juice, basil, salt and pepper together in a cup or small jug, then drizzle over the salmon and vegetables.
  8. Place the baking tray in the oven and cook for about 15 minutes, until the salmon is opaque.
  9. Serve the salmon surrounded by the vegetables.
