Ingredients
8 baby new potatoes, halved
4 oz whole green beans, trimmed
10 cherry tomatoes, halves
2 large boneless salmon fillets
6 anchovy fillets, chopped
2 tbsp olive oil
1 tbsp lemon juice
2 tbsp dried basil
¼ tsp salt
¼ tsp coarse ground black pepper
Method
- Preheat the oven to 200oC / Gas mark 6.
- Cook the potatoes in slightly salted boiling water for about 10 minutes,
until almost done.
- Add the beans to the saucepan and cook for about another 3 minutes.
- Drain the beans and potatoes, transfer to a bowl and toss together with
the cherry tomatoes.
- Place the salmon at one end of a large baking tray and the vegetables at
the other.
- Sprinkle the anchovies over the top of the vegetables.
- Mix the olive oil, lemon juice, basil, salt and pepper together in a cup
or small jug, then drizzle over the salmon and vegetables.
- Place the baking tray in the oven and cook for about 15 minutes, until the
salmon is opaque.
- Serve the salmon surrounded by the vegetables.
