Serves 2

Ingredients

2 litres sunflower oil
2 cups plain flour
½ pint good quality ale
4 tbsp baking powder
½ tsp salt
1 tsp fine ground black pepper
2 large haddock fillets

Method

  1. Heat the oil to 190oC in a large saucepan.
  2. Season the fish with salt and pepper.
  3. Put the flour, ale and baking powder into a bowl and mix well.
  4. Dip the fish into the batter until well coated, then fry in the oil for about 7 minutes until golden brown.
  5. Drain and pat dry with kitchen paper.
  6. Serve with oven chips, mushy peas, salt, vinegar and soft white bread rolls.
