Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

½ lb dried tagliatelle
1 tbsp olive oil
3 tbsp butter
1 tbsp garlic, crushed
2 large or 4 small spring onions, chopped
1 red pepper, chopped
2 courgettes, sliced
2 red chillies, chopped
½ lb large raw prawns
2 tbsp lemon juice
1 tbsp dried coriander
½ tsp salt
½ coarse ground black pepper

Method

  1. Cook the pasta in a saucepan of boiling water according to the instructions on the packet until al dente.
  2. When the pasta is about half cooked, heat the oil and butter in a large frying pan on medium and cook the garlic, spring onions, red pepper, courgettes and chillies for about 3 minutes.
  3. Add the prawns and cook for about another 2 minutes until pink.
  4. Stir in the lemon juice and coriander.
  5. Drain the pasta then return to the pan.
  6. Add the sauce to the pasta and toss well.
  7. Serve with crusty bread.
