Ingredients
½ lb dried tagliatelle
1 tbsp olive oil
3 tbsp butter
1 tbsp garlic, crushed
2 large or 4 small spring onions, chopped
1 red pepper, chopped
2 courgettes, sliced
2 red chillies, chopped
½ lb large raw prawns
2 tbsp lemon juice
1 tbsp dried coriander
½ tsp salt
½ coarse ground black pepper
Method
- Cook the pasta in a saucepan of boiling water according to the
instructions on the packet until al dente.
- When the pasta is about half cooked, heat the oil and butter in a large
frying pan on medium and cook the garlic, spring onions, red pepper,
courgettes and
chillies for about 3 minutes.
- Add the prawns and cook for about another 2 minutes until pink.
- Stir in the lemon juice and coriander.
- Drain the pasta then return to the pan.
- Add the sauce to the pasta and toss well.
- Serve with crusty bread.
