Total cooking and preparation time approximately 30 minutes

Serves 4

Ingredients

4 thick-cut cod fillets, defrosted or fresh
4 tbsp olive oil
½ tsp salt
½ tsp coarse ground black pepper
6 slices white breadcrumbs
¼ lb mature cheddar, grated
1 tbsp dried parsley

Method

  1. Preheat oven to 200oC / gas mark 6.
  2. Place the fish in an ovenproof dish skin side down. Brush with a little of the oil and season with salt and pepper.
  3. Mix the breadcrumbs, cheese, parsley and the remaining oil in a bowl then spread evenly over the top of the fish.
  4. Bake in the oven for about 20 minutes until the fish is opaque.
  5. Serve with garden peas and coriander butter potatoes.
