Ingredients
4 thick-cut cod fillets, defrosted or fresh
4 tbsp olive oil
½ tsp salt
½ tsp coarse ground black pepper
6 slices white breadcrumbs
¼ lb mature cheddar, grated
1 tbsp dried parsley
Method
- Preheat oven to 200oC / gas mark 6.
- Place the fish in an ovenproof dish skin side down. Brush with a little of
the oil and season with salt and pepper.
- Mix the breadcrumbs, cheese, parsley and the remaining oil in a bowl then
spread evenly over the top of the fish.
- Bake in the oven for about 20 minutes until the fish is opaque.
- Serve with garden peas and coriander
butter potatoes.
