Ingredients
2 tbsp olive oil
1 green bell pepper, chopped
4 cod fillets, defrosted or fresh
14 oz can chopped tomatoes
2 tbsp lemon juice
2 tsp Worcestershire sauce
1 tsp salt
1 tsp coarse ground black pepper
Method
- Heat the oil in a frying pan and fry the green pepper for 3 minutes
- Move the pepper to one side and add the cod fillets, skin side down.
- Gently fry the cod for about 3 minutes per side until opaque.
- Mix the tomatoes, lemon juice, Worcestershire sauce, salt and black pepper
together in a jug then add to the pan.
- Cover and cook on a low heat for 5 minutes.
- Serve the fish with the sauce poured over then top, with plain rice.
