Cod with Green Pepper and Tomato

Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

2 tbsp olive oil
1 green bell pepper, chopped
4 cod fillets, defrosted or fresh
14 oz can chopped tomatoes
2 tbsp lemon juice
2 tsp Worcestershire sauce
1 tsp salt
1 tsp coarse ground black pepper

Method

  1. Heat the oil in a frying pan and fry the green pepper for 3 minutes
  2. Move the pepper to one side and add the cod fillets, skin side down.
  3. Gently fry the cod for about 3 minutes per side until opaque.
  4. Mix the tomatoes, lemon juice, Worcestershire sauce, salt and black pepper together in a jug then add to the pan.
  5. Cover and cook on a low heat for 5 minutes.
  6. Serve the fish with the sauce poured over then top, with plain rice.
