Ingredients
1 tbsp capers in vinegar, drained
4 cod fillets
¼ lb butter
1 tbsp white wine vinegar
½ tsp dried parsley
½ tsp coarse ground black pepper
Method
- Wash and rinse the capers in cold water, then set aside.
- Melt 2 tbsp butter in a frying pan and gently fry the cod for about 3
minutes per side until opaque. Remove and set aside.
- Add the remaining butter and allow to melt.
- Add the vinegar, capers, parsley and pepper. Cook for about another
minute, stirring continuously.
- Serve the fish with the sauce poured over the top, with baby new
potatoes.
