Cod in Caper Sauce

Total cooking and preparation time approximately 10 minutes

Serves 2

Ingredients

1 tbsp capers in vinegar, drained
4 cod fillets
¼ lb butter
1 tbsp white wine vinegar
½ tsp dried parsley
½ tsp coarse ground black pepper

Method

  1. Wash and rinse the capers in cold water, then set aside.
  2. Melt 2 tbsp butter in a frying pan and gently fry the cod for about 3 minutes per side until opaque. Remove and set aside.
  3. Add the remaining butter and allow to melt.
  4. Add the vinegar, capers, parsley and pepper. Cook for about another minute, stirring continuously.
  5. Serve the fish with the sauce poured over the top, with baby new potatoes.
