Serves 2

Ingredients

2 large, thick-cut boneless cod fillets
2 tbsp red pepper pesto
2 tbsp olive oil
2 tbsp grated parmesan

Method

  1. Preheat the grill to the highest setting.
  2. Combine the pesto and oil in a small jug or cup and spread evenly over the cod fillets.
  3. Sprinkle the parmesan over the top then grill for 8-10 minutes, until opaque.
  4. Serve with green beans and baby new potatoes.
