Ingredients
2 large, thick-cut boneless cod fillets
2 tbsp red pepper pesto
2 tbsp olive oil
2 tbsp grated parmesan
Method
- Preheat the grill to the highest setting.
- Combine the pesto and oil in a small jug or cup and spread evenly over the
cod fillets.
- Sprinkle the parmesan over the top then grill for 8-10 minutes, until
opaque.
- Serve with green beans and baby new potatoes.
