Ingredients
1 tbsp sunflower oil
1 small or ½ large onion, chopped
2 tsp garlic, crushed
1 green pepper, chopped
14 oz tin tomatoes
¼ pint white wine
2 tsp dried coriander leaves
1 tsp chilli powder
½ tsp coarse ground black pepper
½ lb large cooked peel prawns
Method
- Heat the oil in a frying pan over a medium heat and fry the onions and
garlic for about 3 minutes, until the onion has softened.
- Add the green pepper and cook for about 2 minutes.
- Add the tomatoes, wine, coriander, chilli, black pepper and prawns.
- Mix well and cook for about another 3 minutes, until warmed through.
- Serve with plain rice.
