Serves 2

Ingredients

2 tbsp sunflower or vegetable oil
1 large or 2 small onions, chopped
3 fresh red chillies, finely chopped
2 cloves garlic, crushed
7 oz tin chopped tomatoes, drained
1 tsp mustard powder
1 tsp ground cinnamon
2 tsp ground cumin
2 tsp ground coriander
½ tsp ground turmeric
½ pint coconut milk or double cream
1 lb thick-cut cod fillet, cut into bite-sized chucks

Method

  1. Heat the oil in a large frying pan on a medium heat.
  2. Add the onion, garlic and 2 two of the chillies and fry for about 5 minutes, until the onion and garlic have softened.
  3. Add all the remaining ingredients, except the cod, and cook for about another 2 minutes, until heated through.
  4. Transfer the mixture to a large jug and blitz with a hand blender.
  5. Return to the frying pan, gently stir in the fish and cook for about another 6 minutes, until the fish is opaque.
  6. Garnish with the remaining chilli and serve with basmati rice and poppadums.
