Total cooking and preparation time approximately 25 minutes

Serves 4

Ingredients

2 large salmon fillets
1 tbsp olive oil
¼ tsp salt
¼ tsp coarse ground black pepper

For the marmalade:
1 tbsp olive oil
1 large or 2 small red onions, halved and sliced
¼ pint red wine
3 tbsp red wine vinegar
2 tbsp caster sugar
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Preheat the grill to the highest setting.
  2. Brush the salmon with olive oil, sprinkle with salt and pepper and grill for about 5 minutes each side, until completely opaque.
  3. Meanwhile, heat the olive oil in a saucepan over a medium-high heat and cook the onions for about 3 minutes, until softened.
  4. Add the wine, vinegar and sugar, salt and pepper.
  5. Increase the heat, and cook for another 15-20 minutes until reduced to marmalade consistency.
  6. Serve the salmon with the marmalade, lettuce, tomato and red onion salad and spicy potato wedges.
