Ingredients

4 haddock fillets, defrosted or fresh
1 large or 2 small onions
6 slices white breadcrumbs
2 tbsp lemon juice
1 tsp salt
1 tsp coarse ground black pepper
1 tbsp butter

Method

  1. Preheat oven to 190oC / gas mark 5.
  2. Place the fish in an ovenproof dish skin side down.
  3. Peel and chop the onion. Mix the onion, breadcrumbs, lemon juice salt and pepper together in a bowl.
  4. Spread the breadcrumb mixture evenly over the top of the fish.
  5. Melt the butter in the microwave then pour over the top.
  6. Bake in the oven for 20 minutes.
  7. Serve with garden peas and coriander butter potatoes.
