Serves 2

Ingredients

4 tbsp olive oil
4 sea bass fillets
1 small onion, thinly sliced
4 tomatoes, thinly sliced
2 fresh green chillies, finely chopped

For the marinade:
4 tbsp white wine vinegar
2 tsp garlic, crushed
1 tsp coarse ground black pepper
½ tsp dried oregano
½ tsp ground cumin
½ tsp chilli powder
½ tsp ground cinnamon
½ tsp salt

Method

  1. Place the marinade ingredients together in a bowl and mix well.
  2. Brush both sides of the fish fillets with the marinade and leave to marinate for at least 10 minutes. Reserve the remaining marinade.
  3. Heat 1 tbsp oil in a frying pan over a moderate heat.
  4. Arrange the fish steaks in the pan and pour over the remaining marinade.
  5. Carefully arrange the onion and tomato on top.
  6. Sprinkle on the fresh chilli and pour the rest of the oil over the top.
  7. Cover and simmer for about 5 minutes until the fish is opaque.
  8. Serve with plain rice.
