Ingredients
4 tbsp olive oil
4 sea bass fillets
1 small onion, thinly sliced
4 tomatoes, thinly sliced
2 fresh green chillies, finely chopped
For the marinade:
4 tbsp white wine vinegar
2 tsp garlic, crushed
1 tsp coarse ground black pepper
½ tsp dried oregano
½ tsp ground cumin
½ tsp chilli powder
½ tsp ground cinnamon
½ tsp salt
Method
- Place the marinade ingredients together in a bowl and mix well.
- Brush both sides of the fish fillets with the marinade and leave to
marinate for at least 10 minutes. Reserve the remaining marinade.
- Heat 1 tbsp oil in a frying pan over a moderate heat.
- Arrange the fish steaks in the pan and pour over the remaining marinade.
- Carefully arrange the onion and tomato on top.
- Sprinkle on the fresh chilli and pour the rest of the oil over the top.
- Cover and simmer for about 5 minutes until the fish is opaque.
- Serve with plain rice.
