Serves 2

Ingredients

1 tbsp sunflower or vegetable oil
1 small or ½ large onion, chopped
1 clove garlic, crushed
1 green pepper, chopped
¼ pint dry white wine
1 tbsp lemon juice
¼ pint crème fraiche
2 tsp tomato purée
1 tbsp paprika
1 tbsp dried parsley
¼ tsp sugar
¼ tsp ground white pepper
12 oz monkfish, cut into bite-sized chunks

Method

  1. Heat the oil in a frying pan on a medium heat and fry the onion, garlic and green pepper for about 3 minutes, until the onion has softened.
  2. Stir in the wine, lemon juice, crème fraiche, tomato purée, paprika, parsley, sugar and white pepper.
  3. Stir in the monkfish, cover and simmer for about 7 minutes, until tender.
  4. Serve with basmati rice.
