Ingredients
1 tbsp sunflower or vegetable oil
1 small or ½ large onion, chopped
1 clove garlic, crushed
1 green pepper, chopped
¼ pint dry white wine
1 tbsp lemon juice
¼ pint crème fraiche
2 tsp tomato purée
1 tbsp paprika
1 tbsp dried parsley
¼ tsp sugar
¼ tsp ground white pepper
12 oz monkfish, cut into bite-sized chunks
Method
- Heat the oil in a frying pan on a medium heat and fry the onion, garlic
and green pepper for about 3 minutes, until the onion has softened.
- Stir in the wine, lemon juice, crème fraiche, tomato purée, paprika,
parsley, sugar and white pepper.
- Stir in the monkfish, cover and simmer for about 7 minutes, until tender.
- Serve with basmati rice.
