Serves 2

Ingredients

2 tbsp olive oil
4 tbsp plain flour
1 tsp salt
1 tsp coarse ground black pepper
2 large haddock fillets
2 eggs, beaten
4 oz grated parmesan
1 fresh red chilli, chopped

Method

  1. Heat the oil in a very hot frying pan
  2. Mix the flour with the salt and pepper
  3. Dust the fish with the seasoned flour, dip into the beaten eggs and press into the parmesan, making sure that it is well coated.
  4. Fry the fish for about 5 minutes, turning halfway through, until golden brown.
  5. Garnish with the chilli and serve with avocado and cress salad and potato salad.
