Ingredients
2 tbsp olive oil
4 tbsp plain flour
1 tsp salt
1 tsp coarse ground black pepper
2 large haddock fillets
2 eggs, beaten
4 oz grated parmesan
1 fresh red chilli, chopped
Method
- Heat the oil in a very hot frying pan
- Mix the flour with the salt and pepper
- Dust the fish with the seasoned flour, dip into the beaten eggs and press
into the parmesan, making sure that it is well coated.
- Fry the fish for about 5 minutes, turning halfway through, until golden
brown.
- Garnish with the chilli and serve with avocado
and cress salad and potato salad.
