Ingredients
8 oz tagliatelle
2 tbsp olive oil
8 oz scallops, halved if large
1 red pepper, finely diced
2 tsp garlic, chopped
¼ tsp paprika
8 oz red pepper pesto
2 tbsp crème fraiche
Method
- Cook the pasta in a large saucepan of boiling water according to the instructions
on the packet, until al dente.
- Meanwhile, heat the oil in a very hot frying pan and fry the scallops,
pepper, garlic and paprika for about 2-3 minutes.
- Stir in the pesto and crème fraiche, and cook for about another minute until heated through.
- Drain the pasta and return to the saucepan.
- Add the sauce and toss until well mixed.
- Serve.
