Pasta with Scallops and Red Pepper

Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

8 oz tagliatelle
2 tbsp olive oil
8 oz scallops, halved if large
1 red pepper, finely diced
2 tsp garlic, chopped
¼ tsp paprika
8 oz red pepper pesto
2 tbsp crème fraiche

Method

  1. Cook the pasta in a large saucepan of boiling water according to the instructions on the packet, until al dente.
  2. Meanwhile, heat the oil in a very hot frying pan and fry the scallops, pepper, garlic and paprika for about 2-3 minutes.
  3. Stir in the pesto and crème fraiche, and cook for about another minute until heated through.
  4. Drain the pasta and return to the saucepan.
  5. Add the sauce and toss until well mixed.
  6. Serve.
