Total cooking and preparation time approximately 10 minutes

Serves 2

Ingredients

2 tbsp butter
4 large or 8 small spring onions, chopped
1 tbsp garlic, crushed
¼ pint dry cider
½ pint double cream
½ tsp salt
½ tsp ground white pepper
½ tsp cayenne pepper
1 tsp lemon juice
1 tbsp chives
1 lb scallops, halved if large

Method

  1. Heat the butter in a frying pan on medium and fry the onions and garlic for about a minute.
  2. Stir in the cider, cream, salt, pepper, cayenne pepper, lemon juice and chives.
  3. Add the scallops and cook for about 3 minutes.
  4. Serve with plain rice.
