Serves 2

Ingredients

1 tbsp sunflower or vegetable oil
½ lb large raw prawns, peeled
2 red chillies, finely chopped
2 tbsp lime juice
1 tbsp dried coriander
¼ pint soured cream
2 cups iceberg lettuce, chopped
4 flour tortillas

Method

  1. Heat the oil in a frying pan on high and fry the prawns and chillies for about 2-3 minutes, until the prawns turn pink.
  2. Add the lime juice, coriander and soured cream and stir well.
  3. Divide the lettuce between the tortillas and spoon some of the prawns and sauce onto each.
  4. Roll up the tortillas with the mixture inside and fold up the ends to form burritos.
  5. Serve with green rice.
