Ingredients
2 tbsp olive oil
1 small or ½ large onion, halved and sliced
½ lb squid rings
1 tsp garlic, crushed
4 tbsp dry white wine
4 tbsp vegetable stock
½ pint passata
1 tsp paprika
1 tbsp dried parsley
1 tsp salt
1 tsp coarse ground black pepper
5 oz tin garden peas
Method
- Heat the oil in a frying pan on a medium heat and fry the onions for about
5 minutes, until softened.
- Add the squid and garlic and fry for about another 2 minutes.
- Add the wine, passata, stock, paprika, parsley, salt and pepper, and mix
well.
- Lower the heat and simmer for about 20 minutes until the squid is tender.
- Stir in the peas and cook for about another 3 minutes until heated
through.
- Serve with spicy potato wedges.
