Total cooking and preparation time approximately 30 minutes

Serves 2

Ingredients

2 tbsp olive oil
1 small or ½ large onion, halved and sliced
½ lb squid rings
1 tsp garlic, crushed
4 tbsp dry white wine
4 tbsp vegetable stock
½ pint passata
1 tsp paprika
1 tbsp dried parsley
1 tsp salt
1 tsp coarse ground black pepper
5 oz tin garden peas

Method

  1. Heat the oil in a frying pan on a medium heat and fry the onions for about 5 minutes, until softened.
  2. Add the squid and garlic and fry for about another 2 minutes.
  3. Add the wine, passata, stock, paprika, parsley, salt and pepper, and mix well.
  4. Lower the heat and simmer for about 20 minutes until the squid is tender.
  5. Stir in the peas and cook for about another 3 minutes until heated through.
  6. Serve with spicy potato wedges.
