Serves 2

Ingredients

2 tbsp olive oil
1 small or ½ large onion, chopped
2 cloves garlic, crushed
1 tsp paprika
1 medium potato, cut into bite-sized chunks
1 cup white wine
14 oz tin chopped tomatoes
1 tbsp dried parsley
8 oz large prawns
1 roasted red pepper from a jar, drained and sliced
½ tsp salt
½ tsp coarse ground black pepper
8 oz thick cod fillet, cut into large chunks

Method

  1. Heat the oil in a frying pan and fry the onion, garlic and paprika, stirring occasionally, for about 3 minutes, until the onion has softened.
  2. Add the potatoes, wine, tomatoes and parsley, bring to the boil, cover and simmer for about 20 minutes, until the potatoes are tender.
  3. Add the prawns, red pepper, salt and black pepper and carefully stir in the fish sauce.
  4. Cook for another 5 minutes, until the fish is opaque and the prawns are pink.
  5. Serve.
