Ingredients
2 tbsp olive oil
1 small or ½ large onion, chopped
2 cloves garlic, crushed
1 tsp paprika
1 medium potato, cut into bite-sized chunks
1 cup white wine
14 oz tin chopped tomatoes
1 tbsp dried parsley
8 oz large prawns
1 roasted red pepper from a jar, drained and sliced
½ tsp salt
½ tsp coarse ground black pepper
8 oz thick cod fillet, cut into large chunks
Method
- Heat the oil in a frying pan and fry the onion, garlic and paprika,
stirring occasionally, for about 3 minutes, until the onion has softened.
- Add the potatoes, wine, tomatoes and parsley, bring to the boil, cover and
simmer for about 20 minutes, until the potatoes are tender.
- Add the prawns, red pepper, salt and black pepper and carefully stir in
the fish sauce.
- Cook for
another 5 minutes, until the fish is opaque and the prawns are pink.
- Serve.
