Tuna with Garlic-Tomato Sauce

Serves 2

Ingredients

2 tbsp olive oil
2 tuna steaks
½ tsp salt
½ tsp coarse ground black pepper
2 tsp crushed garlic
2 tbsp dry white wine
2 tomatoes, chopped and deseeded
1 tsp herbes de Provence

Method

  1. Heat the oil in a very hot frying pan.
  2. Sprinkle the tuna steaks with a little of the salt and pepper and fry for about 3 minutes, turning halfway through.
  3. Transfer to a serving plate and cover to keep warm.
  4. Add the garlic, tomatoes, wine, herbs, and the remaining salt and pepper to the frying pan and cook for 2-3 minutes until the wine has reduced by half.
  5. Serve the fish with the sauce spooned over the top, with green beans and baby new potatoes.
