Total cooking and preparation time approximately 1 hour 10 minutes

Serves 4

Ingredients

2 tbsp sunflower or vegetable oil
2 lb diced lamb
4 cloves garlic, crushed
3 tbsp ginger, finely chopped
1 tsp five-spice powder
6 tbsp dark soy sauce
3 tbsp dry sherry
1 bunch spring onions, chopped
1 pint beef stock
4 tbsp soft brown sugar
1 red pepper
1 green pepper

Method

  1. Heat the oil in a very hot wok and stir-fry the lamb, garlic and ginger until the lamb has browned.
  2. Lower the heat, add all the remaining ingredients except the pepper, and bring to the boil.
  3. Cover and leave to simmer for about an hour until the lamb is tender.
  4. Meanwhile, chop the pepper very finely and set aside.
  5. When the lamb is cooked, serve garnished with the peppers, with plain rice.
