Ingredients
2 tbsp sunflower or vegetable oil
2 lb diced lamb
4 cloves garlic, crushed
3 tbsp ginger, finely chopped
1 tsp five-spice powder
6 tbsp dark soy sauce
3 tbsp dry sherry
1 bunch spring onions, chopped
1 pint beef stock
4 tbsp soft brown sugar
1 red pepper
1 green pepper
Method
- Heat the oil in a very hot wok and stir-fry the lamb, garlic and ginger
until the lamb has browned.
- Lower the heat, add all the remaining ingredients except the pepper, and
bring to the boil.
- Cover and leave to simmer for about an hour until the lamb is tender.
- Meanwhile, chop the pepper very finely and set aside.
- When the lamb is cooked, serve garnished with the peppers, with plain
rice.
