Ingredients
2 lb lamb, diced
2 tbsp plain flour
2 tbsp olive oil
2 clove garlic, crushed
14 oz tin chopped tomatoes
1 tbsp tomato purée
4 oz jar chargrilled artichokes, drained
1 cup black olives, pitted
4 tbsp white wine
2 cups beef stock
1 tbsp dried rosemary
Method
- Toss the lamb in the flour until well coated.
- Heat the oil in a very hot, large saucepan and fry the lamb and for about
5 minutes, until browned.
- Lower the heat slightly, stir in the remaining ingredients and simmer for
about 30 minutes.
- Serve with baby new potatoes.
