Total cooking and preparation time approximately 20 minutes plus marinating time

Serves 2

Ingredients

1 lb diced lamb
1 pint bottle French dressing
8 large kebab skewers
2 courgettes, sliced

Method

  1. Marinate the lamb in the French dressing overnight.
  2. Preheat the grill to the highest setting.
  3. Meanwhile, soak the kebab skewers in cold water, then drain.
  4. Chop the courgette into pieces approximately the same size as the lamb.
  5. Place chunks of lamb and courgette slices onto the skewer alternating between each.
  6. Grill for 15 minutes under a hot grill turning halfway through cooking.
  7. Serve with tzatziki, lettuce, tomato and red onion salad, and plain rice.
