Lamb with Aubergine and Courgettes

Serves 2

Ingredients

2 large or 4 small lamb steaks
1 aubergine, sliced
1 courgette, sliced
1 red pepper, cut into strips
1 tbsp olive oil
4 oz feta cheese

For the dressing:
1 tbsp dried mint
1 tbsp clear honey
1 tsp English mustard
2 tbsp lime juice
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Preheat the grill to the highest setting.
  2. Mix the dressing ingredients together in a jug or bowl.
  3. Brush the lamb steaks and vegetables on both sides with the dressing.
  4. Grill the lamb chops for about 7 minutes.
  5. Turn the chops over, add the vegetables to the grill pan and grill for a further 7 minutes.
  6. Arrange the lamb on the plates with the aubergine alongside in a layer. Top the aubergine with a layer of courgettes followed by the red pepper.
  7. Crumble the feta cheese and scatter on top of the vegetables.
  8. Pour any remaining dressing over the lamb and serve.
