Ingredients
2 large or 4 small lamb steaks
1 tbsp olive oil
1 lb fresh spinach
2 tsp garlic, crushed
1 tbsp pine nuts
2 tbsp sultanas
1 tbsp lemon juice
Method
- Preheat the grill on the highest setting.
- Brush the lamb steaks all over with olive oil and grill for about 5
minutes each side.
- Meanwhile, wash the spinach, place into a large saucepan on medium-high
and cook for about 2 minutes, until wilted.
- Drain the liquid from the spinach using a colander, then return to the
pan.
- Add the garlic, pine nuts, sultanas and lemon juice and cook for about
another minutes, until heated through.
- Serve the lamb chops on top of the spinach, with
coriander butter
potatoes.
