Ingredients

2 large or 4 small lamb steaks
1 tbsp olive oil
1 lb fresh spinach
2 tsp garlic, crushed
1 tbsp pine nuts
2 tbsp sultanas
1 tbsp lemon juice

Method

  1. Preheat the grill on the highest setting.
  2. Brush the lamb steaks all over with olive oil and grill for about 5 minutes each side.
  3. Meanwhile, wash the spinach, place into a large saucepan on medium-high and cook for about 2 minutes, until wilted.
  4. Drain the liquid from the spinach using a colander, then return to the pan.
  5. Add the garlic, pine nuts, sultanas and lemon juice and cook for about another minutes, until heated through.
  6. Serve the lamb chops on top of the spinach, with coriander butter potatoes.
