Lamb with Tomato and Mint Vinaigrette

Total cooking and preparation time approximately 15 minutes

Serves 2

Ingredients

2 large or 4 small lamb steaks
1 tbsp olive oil
1 tsp coarse ground black pepper
1 tomato
1 tbsp mint sauce
1 clove garlic, crushed
½ tsp clear honey

Method

  1. Preheat the grill to the highest setting.
  2. Brush the lamb with the oil, sprinkle with pepper and grill the lamb for about 5 minutes each side depending on how you like it cooked.
  3. Meanwhile, chop and deseed the tomato and place in a small bowl.
  4. Add the mint sauce, garlic and honey and mix until well combined.
  5. When the lamb is done, serve it with the sauce spooned over the top, with lemon pepper potatoes and mixed green salad.
