Serves 4

Ingredients

2 lb minced lamb
1 small or ½ large onion, grated
2 tbsp dried parsley
3 tsp paprika
2 tsp chilli powder
½ tsp cinnamon
2 tbsp salt
8 large kebab skewers

Method

  1. Preheat the grill to the highest setting.
  2. Put the lamb, onion, parsley, paprika, chilli, cinnamon and salt into a large bowl and mix well.
  3. Divide the mixture into eight, compact together tightly using your hands and form around the skewers.
  4. Grill for about 10 minutes, turning halfway through.
  5. Serve with Gem Lettuce leaves and tabbouleh.
