Ingredients
1 oz butter
1 large or 2 small onions, chopped
1 granny smith apple, cored and chopped
1 tbsp curry powder
1 lb minced lamb
1 tbsp mango chutney
½ cup raisins
1 tbsp lemon juice
1 tbsp salt
1 tbsp coarse ground black pepper
For the topping:
2 eggs, beaten
½ pint natural yoghurt
½ tsp salt
½ tsp ground white pepper
1 tbsp flaked almonds
Method
- Melt the butter in a frying pan on medium heat and fry the onion, apple
and curry powder fry for about another 3 minutes, until the onion and apple
have softened slightly.
- Add the lamb, chutney, raisins, lemon juice, salt and pepper.
- Mix well and transfer to a deep baking dish.
- Mix the topping ingredients together and pour over the meat mixture.
- Cook in the oven for about 30 minutes, until the topping has set.
- Serve with lettuce,
cucumber and cress salad.
