Total cooking and preparation time approximately 40 minutes

Serves 2

Ingredients

1 oz butter
1 large or 2 small onions, chopped
1 granny smith apple, cored and chopped
1 tbsp curry powder
1 lb minced lamb
1 tbsp mango chutney
½ cup raisins
1 tbsp lemon juice
1 tbsp salt
1 tbsp coarse ground black pepper

For the topping:
2 eggs, beaten
½ pint natural yoghurt
½ tsp salt
½ tsp ground white pepper
1 tbsp flaked almonds

Method

  1. Melt the butter in a frying pan on medium heat and fry the onion, apple and curry powder fry for about another 3 minutes, until the onion and apple have softened slightly.
  2. Add the lamb, chutney, raisins, lemon juice, salt and pepper.
  3. Mix well and transfer to a deep baking dish.
  4. Mix the topping ingredients together and pour over the meat mixture.
  5. Cook in the oven for about 30 minutes, until the topping has set.
  6. Serve with lettuce, cucumber and cress salad.
