Ingredients
2 tbsp olive oil
1 large or 2 small onions, sliced
1 lb minced lamb
1 tbsp garlic, crushed
14 oz tin chopped tomatoes
½ pint lamb stock
2 tsp cumin
1 tsp ground coriander
1 tsp ground ginger
2 tsp dried parsley
2 tsp dried mint
1 tsp salt
1 tsp coarse ground black pepper
2 x 20 oz tins new potatoes
14 oz tin chickpeas
Method
- Heat the oil in a large saucepan on a medium heat and cook the lamb, onions and
garlic for about 10 minutes
until the onions have softened and the meat has browned.
- Add the chopped tomatoes, stock, cumin, coriander, ginger, parsley, mint,
salt, pepper, potatoes and chickpeas. Stir
well.
- Bring to the boil and simmer for about half an hour.
- Serve with toasted pitta breads.
