Total cooking and preparation time approximately 45 minutes

Serves 4

Ingredients

2 tbsp olive oil
1 large or 2 small onions, sliced
1 lb minced lamb
1 tbsp garlic, crushed
14 oz tin chopped tomatoes
½ pint lamb stock
2 tsp cumin
1 tsp ground coriander
1 tsp ground ginger
2 tsp dried parsley
2 tsp dried mint
1 tsp salt
1 tsp coarse ground black pepper
2 x 20 oz tins new potatoes
14 oz tin chickpeas

Method

  1. Heat the oil in a large saucepan on a medium heat and cook the lamb, onions and garlic for about 10 minutes until the onions have softened and the meat has browned.
  2. Add the chopped tomatoes, stock, cumin, coriander, ginger, parsley, mint, salt, pepper, potatoes and chickpeas. Stir well.
  3. Bring to the boil and simmer for about half an hour.
  4. Serve with toasted pitta breads.
