Total cooking and preparation time approximately 10 minutes

Serves 2

Ingredients

4 large or medium eggs
2 slices square-cut white bread
2 tbsp butter for spreading

Method

  1. Bring a saucepan of water to the boil and boil the eggs for 5 minutes.
  2. Meanwhile, cut the side crusts off the bread but leave the top and bottom ones remaining.
  3. Toast until golden brown, allow to cool slightly, then butter.
  4. Cut the bread in half parallel to the remaining crusts then cut each half into strips about an inch wide or 'soldiers'.
  5. Serve the eggs on a plate in egg cups, accompanied by the toasted soldiers.
