Ingredients
4 large or medium eggs
2 slices square-cut white bread
2 tbsp butter for spreading
Method
- Bring a saucepan of water to the boil and boil the eggs for 5 minutes.
- Meanwhile, cut the side crusts off the bread but leave the top and bottom
ones remaining.
- Toast until golden brown, allow to cool slightly, then butter.
- Cut the bread in half parallel to the remaining crusts then cut each half
into strips about an inch wide or 'soldiers'.
- Serve the eggs on a plate in egg cups, accompanied by the toasted
soldiers.
