Serves 2

Ingredients

12 oz sirloin steak
1 medium crusty baguette
2 tbsp olive oil
1 small or ½ large onion, halved and sliced
¼ cup grated medium cheddar
1 handful rocket
2 tsp American mustard

Method

  1. Preheat the oven to 150oC / gas mark 2.
  2. Bash the steak with your hand to flatten it slightly.
  3. Heat the baguette in the oven for about 5 minutes until warmed through, but not too crispy.
  4. Meanwhile, heat the oil in a very hot frying pan and fry the onion and steak for about 2½ minutes.
  5. Turn the steak over, sprinkle on the cheese and fry for another 2½ minutes, then remove from the pan and chop into bite-sized pieces.
  6. Remove the baguette from the oven and cut a slit in the top to about ¾ the way down.
  7. Stuff the rocket into the slit in the baguette, then add the steak and pour over the juice from the pan.
  8. Top with the mustard and serve with good quality potato crisps.
