Serves 2

Ingredients

4 oz broccoli florets
4 oz cauliflower florets
4 oz sugar snap peas
4 oz baby sweetcorn
4 oz carrot batons
2 large or 4 small pitta breads
8 oz tub fresh houmus

Method

  1. Blanch the vegetable in lightly salted boiling water for 2 minutes.
  2. Meanwhile, toast the pitta breads until crispy.
  3. Drain the vegetables and quench in cold water.
  4. Serve with the houmus and pitta breads.
