Serves 2

Ingredients

4 hard boiled eggs, roughly chopped
2 tbsp mayonnaise
4 slices white bread
2 tbsp butter

Method

  1. Put the eggs and mayonnaise into a bowl and mix well.
  2. Butter the bread then top two of the slices with the egg mayonnaise mixture.
  3. Place the remaining bread slices on top and cut in half diagonally.
  4. Serve with good quality potato crisps.
