Serves 2

Ingredients

1 tbsp olive oil
1 small or ½ large onion, chopped
2 tsp crushed garlic
1 green pepper, chopped
4 fresh tomatoes, chopped and deseeded
¼ tsp chilli powder
4 eggs, beaten
5 tbsp single cream
2 tsp dried coriander
¼ tsp of salt
¼ tsp ground white pepper

Method

  1. Heat the oil in a frying pan on medium-high.
  2. Add the onion, garlic, pepper, tomatoes and chilli powder, and fry for about 3 minutes until the onion is beginning to soften.
  3. Meanwhile, mix the eggs, cream, coriander, salt and pepper together in a bowl then add to the pan.
  4. Cook, stirring occasionally, until the egg is set and scrambled.
  5. Serve with spicy tortilla chips.
