Ingredients
4 large eggs
4 English muffins
1 tbsp butter for spreading
4 slices good quality ham
4 tbsp hollandaise sauce
¼ tsp coarse ground black pepper
Method
- Poach the eggs in boiling water or in the microwave using a poaching tray.
- Meanwhile, cut the muffins in half and toast them a toaster until golden
brown.
- Folder the slices of ham neatly so that they are the same size as the
muffins.
- Serve each muffin with ham on top, followed by one poached egg and a dollop of Hollandaise sauce.
- Season lightly with coarse ground black pepper.
- Serve.
