Serves 4

Ingredients

4 large eggs
4 English muffins
1 tbsp butter for spreading
4 slices good quality ham
4 tbsp hollandaise sauce
¼ tsp coarse ground black pepper

Method

  1. Poach the eggs in boiling water or in the microwave using a poaching tray.
  2. Meanwhile, cut the muffins in half and toast them a toaster until golden brown.
  3. Folder the slices of ham neatly so that they are the same size as the muffins.
  4. Serve each muffin with ham on top, followed by one poached egg and a dollop of Hollandaise sauce.
  5. Season lightly with coarse ground black pepper.
  6. Serve.
