Ingredients
8 oz feta cheese
2 cup shredded iceberg lettuce
4 tomatoes
½ cucumber
20 approx. black olives, pitted
For the dressing:
6 tbsp olive oil
1 tsp dried oregano
2 tsp dried parsley
2 tbsp lemon juice
1 garlic clove, crushed
½ tsp sugar
½ tsp salt
½ tsp coarse ground black pepper
Method
- Put the dressing ingredients into a mug or small bowl and mix until well
combined.
- Chop and deseed the cucumber, cut the tomatoes into quarters and cut the
feta into chunks..
- Put the lettuce, cucumber, tomato, feta and olives in a bowl, pour on the
dressing, then toss until well mixed.
- Serve with crusty bread.
