Ingredients

8 oz feta cheese
2 cup shredded iceberg lettuce
4 tomatoes
½ cucumber
20 approx. black olives, pitted

For the dressing:
6 tbsp olive oil
1 tsp dried oregano
2 tsp dried parsley
2 tbsp lemon juice
1 garlic clove, crushed
½ tsp sugar
½ tsp salt
½ tsp coarse ground black pepper

Method

  1. Put the dressing ingredients into a mug or small bowl and mix until well combined.
  2. Chop and deseed the cucumber, cut the tomatoes into quarters and cut the feta into chunks..
  3. Put the lettuce, cucumber, tomato, feta and olives in a bowl, pour on the dressing, then toss until well mixed.
  4. Serve with crusty bread.
