Ingredients
1 egg
3 tbsp green pesto
3 tbsp plain flour
¼ pint milk
1 tbsp sunflower or vegetable oil
3 slices thick-cut ham
Method
- Place the eggs in a small bowl and beat.
- Stir in the pesto, flour and milk, and whisk until all the lumps have
gone.
- Heat the oil in a very hot frying pan and fry the batter for about 2
minutes, until cooked on one side.
- Toss the pancake and continue to cook for another 2 minutes, until firm
underneath.
- Place the pancake onto a plate, top one half with the ham, then fold the
other half over the top.
- Serve with a mixed green
salad.
