Serves 1

Ingredients

1 egg
3 tbsp green pesto
3 tbsp plain flour
¼ pint milk
1 tbsp sunflower or vegetable oil
3 slices thick-cut ham

Method

  1. Place the eggs in a small bowl and beat.
  2. Stir in the pesto, flour and milk, and whisk until all the lumps have gone.
  3. Heat the oil in a very hot frying pan and fry the batter for about 2 minutes, until cooked on one side.
  4. Toss the pancake and continue to cook for another 2 minutes, until firm underneath.
  5. Place the pancake onto a plate, top one half with the ham, then fold the other half over the top.
  6. Serve with a mixed green salad.
