Muffins with Bacon and Scrambled Egg

Total cooking and preparation time approximately 10 minutes

Serves 2

Ingredients

2 English muffins
4 eggs, beaten
pinch of salt
pinch of ground white pepper
1 tbsp butter
4 slices back bacon

Method

  1. Preheat the grill to the highest setting.
  2. Toast the muffins in a toaster until golden brown.
  3. Meanwhile, grill the bacon for about 5 minutes each side, until just slightly crispy.
  4. Put the eggs in a bowl and microwave on full power for 20 seconds then beat with a fork. Repeat until cooked and scrambled, then season with salt and pepper.
  5. Butter the muffins, top with bacon, then the scrambled egg.
  6. Serve.
